With Valentines Day around the corner, I’m sure that most of you have an idea of how you want to spend the day. My plan is to make a copious amount of chocolate covered vodka strawberries and see how it goes from there. Just look at the recipe and you’ll be making some vodka plans yourself.
What You’ll Need
1. lb. (500g) strawberries
2. 1 cup (240ml) vodka or your liquor of choice
3. 1 package dark chocolate chips
4. 1 package white chocolate chips (in case you want to try two different colors for decorating)
5. Toppings to decorate the strawberries
Directions
1. Poke holes in all of the strawberries with a fork. This allows them to soak up more of that sweet, sweet hooch.
2. Sterilize a quart size jar by running through the dishwasher or by soaking it for a couple of minutes in boiling water.
3. Place the strawberries inside the jar and pour the cup of vodka over the berries. Save the vodka bottle and lid so that you can save the strawberry infused vodka to drink!
4. Refrigerate the jarred fruit. The longer that you soak them, the more vodka will be soaked in. You shouldn’t leave them in for any longer than 24 hours. Do a taste test after a couple of hours to get an idea of how strong you want them to be.
5. Open the jar and gingerly remove the strawberries with a spoon.
6. Pour the vodka through a coffee filter to strain out any particles. Pour it back into its original bottle if you are wanting to save it for cocktails.
7. If you don’t use the strawberries right away, you can keep them in the fridge for up to three days. You can also freeze them if you want, but freeze them in an air tight container.
8. Melt your chocolate in either a double boiler or in the microwave. If you choose to microwave it, then use a microwave safe bowl and microwave it at 30 second intervals. That way it won’t overcook. Just set the microwave for 30 seconds and when it’s done, stir. Keep repeating this process until it’s all melted.
9. Set out a large piece of wax paper and dip the strawberries one at a time into the freshly melted chocolate. Give a quick swirl and place on the wax paper.
10. While the chocolate is still wet, sprinkle the strawberry with whatever decoration you would like to use. Sparkling sugars, sprinkles, crushed candies and nuts all work well.
11. Allow the strawberries to completely cool. It’s best to let them reach room temperature on the counter rather than in the fridge. The drop in temperature can muck up the chocolate.
12. You can either dive into them right then and there, or place in a nice box on top of some tissue paper and wrap up for your loved one.
Just like that you have a great Valentines Day gift that does double duty. It’s delicious AND will give you a buzz. Enjoy!
