I am a salsa whore. It’s great for a snack and sometimes I have a craving for spice. The thing with spice and my stomach, is that sometimes it adds too much heat and I’ll feel gross after. With salsa, it’s fresh while keeping its spice so I don’t end up feeling like my body is on fire.

I’m always looking for different and easy salsas to try, mainly because I’m not into canning, I want something that I can eat without waiting a month, and it’s only going to last for three minutes around me. So here is a super simple watermelon salsa that’s fresh, different, and delicious.

Watermelon Salsa
Makes- 4 cups
Prep time- 15 minutes

Ingredients

1. 1/2 red onion
2. 1 large line
3. 1/2 medium watermelon
4. 1 English cucumber
5. 1 large jalapeño pepper
6. 1/2 cup cilantro leaves (optional).
7. Salt
8. Tortilla chips

How To

1. Finely chop red onion and place in a large bowl. Halve the lime and squeeze the juice over the onion. Mix. Let sit while you chop remaining ingredients.
2. Cut the rind from watermelon and dice (you should get around 3 cups). Dice the cucumber. Halve the jalapeño, remove the seeds, and finely chop. Coarsely chop the cilantro leaves if you decide to use them.
3. Add the watermelon, cucumber, jalapeño, cilantro and 1/2 teaspoon of salt to the onion and toss gently. Refrigerate for 1 hour before serving.
4. Eat!

Leftovers can be refrigerated in an airtight container for up to three days, if it lasts that long. I don’t think I’ve ever had it in my fridge for that amount of time.
