Sometimes keeping up your salad game is hard to do. Here are a couple of my favorites that are great as entrees or side dishes. Both are filled with flavor and are super satisfying. Enjoy.
Mediterranean Crunch Salad
Ingredients:
- 1 (15 ounce) can no salt added garbanzo beans, drained
- 1 chopped cucumber
- 1 cup small broccoli florets
- 1 cup halved grape tomatoes
- 1 cup finely sliced kale with tough stems removed
- 2 tablespoons chopped kalamata olives
- 3 tablespoons red wine vinegar
- 1 clove minced garlic
- 1 tablespoon chopped fresh parsley
Directions:
Combine all ingredients and let chill for one hour
Avocado, Tomato and Mozzarella Salad
Ingredients
- 2 avocados, pitted, peeled and cut into bite size chunks
- 2-3 tomatoes cubed
- 1 package mozzarella cut into bite size
- 2 tablespoons extra virgin olive oil
- 2 teaspoons basil
- Salt and pepper
Directions:
Combine avocados, tomatoes and mozzarella. Drizzle with olive oils and toss with basil and salt and pepper.
