Sometimes keeping up your salad game is hard to do. Here are a couple of my favorites that are great as entrees or side dishes. Both are filled with flavor and are super satisfying. Enjoy.

Mediterranean Crunch Salad

Ingredients:

  • 1 (15 ounce) can no salt added garbanzo beans, drained
  • 1 chopped cucumber
  • 1 cup small broccoli florets
  • 1 cup halved grape tomatoes
  • 1 cup finely sliced kale with tough stems removed
  • 2 tablespoons chopped kalamata olives
  • 3 tablespoons red wine vinegar
  • 1 clove minced garlic
  • 1 tablespoon chopped fresh parsley

Directions:

Combine all ingredients and let chill for one hour

Avocado, Tomato and Mozzarella Salad

Ingredients

  • 2 avocados, pitted, peeled and cut into bite size chunks
  • 2-3 tomatoes cubed
  • 1 package mozzarella cut into bite size
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons basil
  • Salt and pepper

Directions:

Combine avocados, tomatoes and mozzarella. Drizzle with olive oils and toss with basil and salt and pepper.
